Seafood Pie

cooked dinner for afew ppl today. . hehe.. and since a certain someone likes fish and i've been dying to try making a seafood pie, so the menu was confirmed! :)

Ingredients
800g fish fillet (i used basa fish)
400g prawns (peeled, halved)
1 brown onion (coarsely chopped)
1 bay leaf (dried)
3 cups of milk
100g butter
1 leek
1/2 cup thin cream
1/4 cup plain flour
1 tbsp chives (use fresh ones if u have)
1 tbsp dill (use fresh ones if u have)

Method
1. Preheat oven to 180°C.
2. Place fish and prawns in a large frying pan. Add the onion, bay leaf and pour over 2 1/2 cups (625ml) of the milk.
3. Place over high heat and bring to a simmer. Reduce heat to low and cook for 5 minutes or until fish is just cooked through. Remove from heat.
4. Use a fish slice or slotted spoon to transfer fish and prawns to a plate. Set aside to cool slightly. Flake fish into large pieces and place in a large bowl.
5. Strain milk mixture through a fine sieve into a jug. Discard solids.
6. Melt half the butter in a medium saucepan until foaming. Add in leek and cook till soft.
7. Add the flour and cook, stirring, for 2 minutes or until mixture bubbles. Gradually add the reserved milk mixture, while constantly stirring. Cook, stirring, for 5 minutes or until sauce boils and thickens.
8. Remove from heat. Add half the cream and season to taste with salt and pepper. Add the chives and dill and gently toss until just combined.
9. Add in fish and prawns and pour into a 6-cup (1.5L) capacity ovenproof dish.
10. Meanwhile, cook the potatoes in a large pan of boiling salted water for 15 minutes or until tender.
11. Drain well and return to pan with remaining butter, milk and cream. Use a potato masher or fork to mash until smooth. Add salt and pepper to taste. Spoon potato mixture over the fish mixture.
12. Bake in preheated oven for 20 minutes or until golden brown and heated through. Serve immediately.


it turned out absolutely yummy :) only complain is it was too watery, so it kinda fell apart. i had a abit of left overs so i mixed the potato into the fish and prawn mixture to hopefully make it less watery, and put a puff pastry over the top.. i'm having that for dinner tomorrow.. will update if it worked. hehe.. anw. yes it was finished.. love it. hehe. will make it again. only complain is prawns are expensive.. so dunno if i'll make it as often. heh..
