mango yoghurt panna cotta

I have never tried making panna cotta before.. i tried one years ago but i had bad memories about it.. i rmb it tasted rubbery.. anyhow, i had a really yummy one at a fren's wedding recently so was inspired to try this one... it didnt turn out too bad. hehe.


Ingredients:
Mango Jelly
1 fresh mango (diced to small cubes)
1 pkt mango jelly
Pannacotta
375ml pouring cream
45g pure icing sugar, sifted
6 g gold leaf gelatin (3 leaves = 1 tbsp gelatin powder)
180g full fat yoghurt
1 tsp vanilla paste (or essence)

Method:
1. Make the jelly as instructed on the box.
2. Place some cut mango at the bottom of the cup. Fill with 3-4 tbsp of jelly or just covering mango. Make 5 ikea kids cup.
3. For the pannacotta, place cream and icing sugar in a small saucepan over medium heat and cook, stirring, for 3-4 minutes or until heated through.
4. Remove from heat. (If using gelatin leaves, soak the gelatin in cold water until soft) Stir gelatin into the warm cream.
5. Gently whisk the yoghurt and vanilla paste into the cream mixture.
6. Pour the mixture evenly among the prepared moulds. Blast chill for 5 minutes then refrigerate for 20 minutes or until set (alternatively refrigerate for 4 hours or until set)
7. Place pannacottas into warm water for a few seconds. Carefully slide a paring knife down the inside edge of the mould, then invert moulds onto a serving plates and gently shake to remove pannacotta. Serve with remaining fresh mangos.
