shepherd's pie

i've made this a couple of times.. sadly i have never gotten to take pictures of it. i shld nxt time. hehe. anyhow, better record down d recipe b4 i forget.. since it was quite well received. hehe.

Ingredients
- 700g mince beef
- 1 carrot diced
- 1 onion diced
- tomato sauce
- bbq sauce
- corn flour
- about 800g potatoes skinned and chopped in halves
- about half a block of butter (roughly 125g)
- salt & pepper

Method
- boil the potatoes in salted water till soft and mash it up with the butter
- fry onion and carrot in a pan till onions are brown, add in mince and fry till cooked
- add in tomato sauce and bbq sauce till a taste u like. use roughly equal portions of both sauces
- season with salt and pepper if needed.
- add a lil corn flour with water and mix into mince
- place mince mixture into base of a pyrax tray or anything that can go into the oven. i always use different trays. roughly one that is just a little smaller than A4 sheet.
- cover mash on top. use a fork to draw lines over the top for presentation
- bake in over at 180deg till top of potato turns brown.
- serve :)

mango yoghurt panna cotta

I have never tried making panna cotta before.. i tried one years ago but i had bad memories about it.. i rmb it tasted rubbery.. anyhow, i had a really yummy one at a fren's wedding recently so was inspired to try this one... it didnt turn out too bad. hehe.


Ingredients:
Mango Jelly
1 fresh mango (diced to small cubes)
1 pkt mango jelly
Pannacotta
375ml pouring cream
45g pure icing sugar, sifted
6 g gold leaf gelatin (3 leaves = 1 tbsp gelatin powder)
180g full fat yoghurt
1 tsp vanilla paste (or essence)

Method:
1. Make the jelly as instructed on the box.
2. Place some cut mango at the bottom of the cup. Fill with 3-4 tbsp of jelly or just covering mango. Make 5 ikea kids cup.
3. For the pannacotta, place cream and icing sugar in a small saucepan over medium heat and cook, stirring, for 3-4 minutes or until heated through.
4. Remove from heat. (If using gelatin leaves, soak the gelatin in cold water until soft) Stir gelatin into the warm cream.
5. Gently whisk the yoghurt and vanilla paste into the cream mixture.
6. Pour the mixture evenly among the prepared moulds. Blast chill for 5 minutes then refrigerate for 20 minutes or until set (alternatively refrigerate for 4 hours or until set)
7. Place pannacottas into warm water for a few seconds. Carefully slide a paring knife down the inside edge of the mould, then invert moulds onto a serving plates and gently shake to remove pannacotta. Serve with remaining fresh mangos.

chocolate coated strawberries


strawberries were really cheap.. like 99cents a punnet.. so i decided to do chocolate coated strawberries for deserts :)

its really easy and yummy. hehe..

ingredients
150g chocolate (milk or dark or white)
250g strawberries

method
1. place chocolate in a metal bowl and place over a pot of boiling water
2. keep stirring chocolate till all is melted
3. dip strawberries into melted chocolate and place on a plate or tray lined with baking paper
4. refrigerate till chocolate sets

Seafood Pie

cooked dinner for afew ppl today. . hehe.. and since a certain someone likes fish and i've been dying to try making a seafood pie, so the menu was confirmed! :)

Ingredients
800g fish fillet (i used basa fish)
400g prawns (peeled, halved)
1 brown onion (coarsely chopped)
1 bay leaf (dried)
3 cups of milk
100g butter
1 leek
1/2 cup thin cream
1/4 cup plain flour
1 tbsp chives (use fresh ones if u have)
1 tbsp dill (use fresh ones if u have)

Method
1. Preheat oven to 180°C.
2. Place fish and prawns in a large frying pan. Add the onion, bay leaf and pour over 2 1/2 cups (625ml) of the milk.
3. Place over high heat and bring to a simmer. Reduce heat to low and cook for 5 minutes or until fish is just cooked through. Remove from heat.
4. Use a fish slice or slotted spoon to transfer fish and prawns to a plate. Set aside to cool slightly. Flake fish into large pieces and place in a large bowl.
5. Strain milk mixture through a fine sieve into a jug. Discard solids.
6. Melt half the butter in a medium saucepan until foaming. Add in leek and cook till soft.
7. Add the flour and cook, stirring, for 2 minutes or until mixture bubbles. Gradually add the reserved milk mixture, while constantly stirring. Cook, stirring, for 5 minutes or until sauce boils and thickens.
8. Remove from heat. Add half the cream and season to taste with salt and pepper. Add the chives and dill and gently toss until just combined.
9. Add in fish and prawns and pour into a 6-cup (1.5L) capacity ovenproof dish.
10. Meanwhile, cook the potatoes in a large pan of boiling salted water for 15 minutes or until tender.
11. Drain well and return to pan with remaining butter, milk and cream. Use a potato masher or fork to mash until smooth. Add salt and pepper to taste. Spoon potato mixture over the fish mixture.
12. Bake in preheated oven for 20 minutes or until golden brown and heated through. Serve immediately.


it turned out absolutely yummy :) only complain is it was too watery, so it kinda fell apart. i had a abit of left overs so i mixed the potato into the fish and prawn mixture to hopefully make it less watery, and put a puff pastry over the top.. i'm having that for dinner tomorrow.. will update if it worked. hehe.. anw. yes it was finished.. love it. hehe. will make it again. only complain is prawns are expensive.. so dunno if i'll make it as often. heh..

drunken chicken

sometime back, i was cooking dinner and decided to cook drunken chicken.. this recipe was a lil weird cos it required gula melaka. =S anyhow, i've tweaked it abit so shld b alright


Ingredients:
1L shaoxing (Chinese rice wine)

500ml mirin
1-2L water, or enough to cover chicken
10 drumsticks/a whole chicken
4-6cm ginger, thickly sliced

stalk of spring onion
chinese mushroom
enoki mushroom
pepper
soy sauce (to taste)

Method:
(1) Place the shaoxing, mirin, water and palm sugar in a large saucepan and bring to the boil.
(2) Add the chicken and ginger, then cover and simmer gently for 45-60 minutes.
(3) Remove the pan from the heat and allow the chicken to cool in the poaching liquid.
(4) Serve over mee sua

it was a good meal for me. some found the sweetness weird. heh.. anyhow, just gotta change the recipe to your liking :)

Condensed Milk Lemon Slice

ahhh.. i was having a terrible headache and was getting kinda moody when i chanced upon a food blog and saw this recipe.. its from the back of the condensed milk can. i tried finding the recipe while getting the condensed milk from IGA and turned all the labels to face inside. think the workers muz b annoyed with me. haha.. oopsy.. anw. i didnt find it sad to say.. but baking did make my day. or mayb its cos of the 2 tablets of nurofen that cleared the headache. anyhow, i have something to bring to the dinner later now :) goody.


Ingredients:
Biscuit base
- 1.5 cup plain flour
- 0.5 cup icing sugar
- 150g butter
Lemony bit :)
- 395g condensed milk
- 1 tsp baking powder
- 1 tbsp lemon zest
- 2 tbsp plain flour
- 1 egg
- 0.5 cup lemon juice

Method:
(1) Mix the biscuit base ingredients together and press into base of pan about 20x30cm (i used a disposable aluminium tray)
(2) Bake biscuit base for at 180 deg for 15min till golden brown
(3) Mix all of the lemony bit ingredients together
(4) Pour lemon mixture on top of biscuit base
(5) Bake for another 25-30min till golden brown
(6) Allow cake to cool, dust with icing sugar, cut into slices and serve :)

it wasn't as sweet as i thought it would be. which is great. hehe.. the idea of 1 can of condensed milk kinda scared me.. i wld have prefered a stronger lemon taste. but oh wells.. i'll try modifying the next one i do. hehe..
